Sourcing
We partner with small, family-run farms in Kalamata, where the unique microclimate and fertile soil create the perfect conditions for growing exceptional olives.

Harvest
Our olives are harvested early in the season, by hand, to ensure they are not bruised. This early harvest yields less oil, but the oil that is produced is richer in flavor and antioxidants.

Extraction
Within hours of being picked, our olives are cold-extracted in a state-of-the-art facility. This process, which uses no heat or chemicals, preserves the oil's natural flavors, aromas, and health benefits.
